A tasty little treat I made tonight. Peppers (red and orange), avocado, onions, cilantro, and some seasonings including O&O lemon olive oil (this stuff is phenomenal, and my goto oil for so many things), a bit of organic Meyer lemon juice, "Jurassic salt", fresh cracked pepper. Served on mini corn tortillas (about 3" diameter) that I fried up to a mostly crispy state (but still allowing you to bend them into a taco-style holder).
